Would you rather have your potato salad with vegan hot dogs or plant based tuna sandwiches??? I made so much of my classic yellow potato said that we were able to enjoy it with two festive lunches this holiday weekend! I shared my recipe on our YouTube channel a few years ago, but I’ll post it for you to make it easy to follow along and share on your socials.

VEGAN YELLOW POTATO SALAD INGREDIENTS:

4 cups chopped yellow or red potatoes

1/2 cup vegan mayonaise

1 Tbsp yellow mustard

2 Tbsp dill relish

1/2 cup sliced celery

1 tsp dill weed

1/2 tsp lemon pepper

OPTIONAL:

1 Tbsp sliced kalamata olives (or your fave olive)

1 /2 cup diced bell pepper

1/4 tsp smoked or sweet paprika

DIRECTIONS:

  1. Boil potatoes in a large pot over medium for 15-20 mins, or until soft.
  2. Drain potatoes in a colander, rinse well with water, and let cool.
  3. In a large bowl, combine all other ingredients, including optional olives and bell pepper.
  4. Fold potatoes into the bowl and stir until thoroughly mixed.
  5. Cover bowl and refrigerate until cooled. 
  6. Before serving, sprinkle the potato salad with optional paprika.
