Would you rather have your potato salad with vegan hot dogs or plant based tuna sandwiches??? I made so much of my classic yellow potato said that we were able to enjoy it with two festive lunches this holiday weekend! I shared my recipe on our YouTube channel a few years ago, but I’ll post it for you to make it easy to follow along and share on your socials.
VEGAN YELLOW POTATO SALAD INGREDIENTS:
4 cups chopped yellow or red potatoes
1/2 cup vegan mayonaise
1 Tbsp yellow mustard
2 Tbsp dill relish
1/2 cup sliced celery
1 tsp dill weed
1/2 tsp lemon pepper
OPTIONAL:
1 Tbsp sliced kalamata olives (or your fave olive)
1 /2 cup diced bell pepper
1/4 tsp smoked or sweet paprika
DIRECTIONS:
- Boil potatoes in a large pot over medium for 15-20 mins, or until soft.
- Drain potatoes in a colander, rinse well with water, and let cool.
- In a large bowl, combine all other ingredients, including optional olives and bell pepper.
- Fold potatoes into the bowl and stir until thoroughly mixed.
- Cover bowl and refrigerate until cooled.
- Before serving, sprinkle the potato salad with optional paprika.
