We are thrilled to announce that Anji’s new collection of whole food oil free vegan recipes, Happy Healthy Vegan Cookbook, is out now!
Like its predecessor, Keep It Carbed, Baby!, this second full color cookbook is available in both print and digital format directly from our website, as well as in the Apple Book and Amazon Kindle stores. The Happy Healthy Vegan Cookbook was created in the same style and sized format as Anji’s first book, with an easy to use spiral binding on the printed book and color photos of every single recipe.
This time around, Anji focused a more on the savoy side of the duo’s favorite healthy meals, and organized the recipes into the categories of One Pot Meals, 2-Step Meals, Brunch, and Snacks. In addition to stove top recipes, she’s also included a number of dehydrator recipes for some of her favorite snacks like kale chips, oatmeal cookies, and carrot cake bites. Many of the recipes list optional pressure cooker directions as well as stove top directions.
